Ingredients

  • 2 pounds Yukon Gold potatoes peeled and sliced
  • 6 slices bacon diced
  • 1 cup onion chopped
  • ¼ cup apple cider vinegar
  • ¼ cup water
  • 3 tablespoons sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley chopped

Instructions 

  1. Boil potatoes in salted water until tender, about 10-15 minutes. Drain and set aside.
  2. Cook bacon in a skillet until crispy. Remove bacon and set aside, leaving the drippings in the skillet.
  3. Sauté onions in the bacon drippings until they are soft and translucent.
  4. Add vinegar, water, sugar, mustard, salt, and pepper to the skillet. Bring to a boil.
  5. Pour the hot dressing over the potatoes. Add bacon and parsley. Toss gently to combine.
  6. Serve warm or at room temperature.
