Ingredients

  • 4 Poblano Peppers
  • 1 cup Cheese (Monterey Jack or Queso Fresco) shredded
  • 3 Eggs separated
  • 1 cup Flour
  • 1 cup Oil for frying

Instructions 

  1. 1. Roast the poblano peppers until the skin is charred. Place them in a plastic bag to sweat, then peel off the skins.
  2. 2. Make a slit in each pepper and remove the seeds. Stuff with cheese.
  3. 3. Beat the egg whites until stiff peaks form. Gently fold in the yolks.
  4. 4. Coat each stuffed pepper in flour, then dip in the egg mixture.
  5. 5. Heat oil in a skillet over medium heat. Fry each pepper until golden brown on all sides.
