Main Ingredients
- 2 slices whole grain bread
- 1 ripe avocado
- 2 eggs
- 1 tablespoon olive oil
- Salt and pepper to taste
Optional Toppings
- a few slices of tomato optional
- a handful of spinach optional
- a slice of cheese optional
Toast the bread slices.
Mash the avocado in a bowl and season with salt and pepper.
Heat olive oil in a pan over medium heat and cook the eggs to your preference.
Spread the mashed avocado on the toasted bread.
Place the cooked eggs on top of the avocado.
Add optional toppings if desired.
Assemble the sandwich and serve immediately.
