Bahamian Chicken Souse

Main Ingredients
- 2 lbs Chicken cut into pieces
- 1 large Onion sliced
- 3 cloves Garlic minced
- 2 medium Potatoes peeled and cubed
- 2 large Carrots sliced
- 1 large Lime juiced
- 1 tablespoon Allspice
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
- 6 cups Water
1. In a large pot, add the chicken pieces and cover with water. Bring to a boil and then reduce to a simmer.
2. Add the sliced onion, minced garlic, potatoes, and carrots to the pot.
3. Squeeze the lime juice into the pot and add the allspice, salt, and black pepper.
4. Let it simmer for about 40 minutes, or until the chicken is cooked through and the vegetables are tender.
5. Adjust seasoning to taste and serve hot.
