  • 6 medium potatoes washed and diced
  • 1 cup mayonnaise
  • ½ cup sour cream
  • 1 cup cheddar cheese shredded
  • ½ cup green onions chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 slices bacon cooked and crumbled

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Spread the diced potatoes on a baking sheet and bake for 30-35 minutes, until golden and crispy.
  3. In a large mixing bowl, combine the mayonnaise, sour cream, cheddar cheese, green onions, salt, and pepper.
  4. Add the baked potatoes and crumbled bacon to the bowl and mix until well combined.
