Ingredients 

Main Ingredients

  • 2 lbs Beef bones
  • 1 Onion, quartered
  • 2 Carrots, chopped
  • 2 stalks Celery, chopped
  • 3 cloves Garlic, crushed
  • 2 tablespoon Tomato paste
  • 10 cups Water
  • 2 teaspoon Salt
  • 1 teaspoon Black peppercorns
  • 2 Bay leaves

Instructions 

  1. 1. Preheat oven to 400°F (200°C). Place beef bones on a baking sheet and roast for 30 minutes.
  2. 2. Transfer roasted bones to a large pot. Add remaining ingredients and bring to a boil.
  3. 3. Reduce heat and simmer for 4 hours, skimming off any foam.
  4. 4. Strain the stock through a fine-mesh strainer. Discard solids.
  5. 5. Let the stock cool, then refrigerate. Skim off any fat that solidifies on top before using.
