Ingredients 

Main Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup peas
  • 2 tablespoon tomato paste
  • 2 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste salt and pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add beef and cook until browned on all sides. Remove beef and set aside.
  2. 2. In the same pot, add onions and garlic. Cook until onions are translucent.
  3. 3. Stir in tomato paste, thyme, and rosemary. Cook for another minute.
  4. 4. Return beef to the pot. Add beef broth, carrots, and potatoes. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, or until beef is tender.
  5. 5. Add peas in the last 10 minutes of cooking. Season with salt and pepper to taste.
