Ingredients 

Main Ingredients

  • 2 tablespoon Butter
  • 1 cup Chopped Onion
  • 1 cup Chopped Carrot
  • 1 cup Chopped Celery
  • 3 cloves Garlic, minced
  • ¼ cup All-purpose Flour
  • 1 cup Beer
  • 2 cups Chicken Broth
  • 2 cups Half-and-Half
  • 3 cups Shredded Cheddar Cheese
  • 1 teaspoon Worcestershire Sauce
  • 1 teaspoon Dry Mustard
  • to taste Salt and Pepper

Instructions 

  1. Melt butter in a large pot over medium heat.
  2. Add onion, carrot, and celery. Cook until tender.
  3. Add garlic and cook for another minute.
  4. Stir in flour and cook for 2 minutes.
  5. Gradually whisk in beer, then chicken broth. Bring to a boil.
  6. Reduce heat and simmer for 10 minutes.
  7. Stir in half-and-half, cheese, Worcestershire sauce, and dry mustard. Cook until cheese is melted and soup is smooth.
  8. Season with salt and pepper to taste. Serve hot.
