Instructions
Melt butter in a large pot over medium heat.
Add onion, carrot, and celery. Cook until tender.
Add garlic and cook for another minute.
Stir in flour and cook for 2 minutes.
Gradually whisk in beer, then chicken broth. Bring to a boil.
Reduce heat and simmer for 10 minutes.
Stir in half-and-half, cheese, Worcestershire sauce, and dry mustard. Cook until cheese is melted and soup is smooth.
Season with salt and pepper to taste. Serve hot.
