  • 4 whole beets medium-sized, scrubbed clean
  • 2 tablespoon olive oil
  • 1 cup goat cheese crumbled
  • 1 cup walnuts toasted
  • 2 tablespoon balsamic vinegar
  • to taste salt
  • to taste black pepper freshly ground

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Wrap each beet in aluminum foil and place on a baking sheet. Roast in the preheated oven for 45 minutes, or until tender.
  3. Allow the beets to cool, then peel and cut into bite-sized pieces.
  4. In a mixing bowl, combine the beets, olive oil, balsamic vinegar, salt, and pepper. Toss to coat evenly.
  5. Top with crumbled goat cheese and toasted walnuts. Serve immediately.
