Beet Salad with Goat Cheese

Main Ingredients
- 4 whole beets medium-sized, scrubbed clean
- 2 tablespoon olive oil
- 1 cup goat cheese crumbled
- 1 cup walnuts toasted
- 2 tablespoon balsamic vinegar
- to taste salt
- to taste black pepper freshly ground
Preheat your oven to 400°F (200°C).
Wrap each beet in aluminum foil and place on a baking sheet. Roast in the preheated oven for 45 minutes, or until tender.
Allow the beets to cool, then peel and cut into bite-sized pieces.
In a mixing bowl, combine the beets, olive oil, balsamic vinegar, salt, and pepper. Toss to coat evenly.
Top with crumbled goat cheese and toasted walnuts. Serve immediately.
