Ingredients

  • 4 cups beets, peeled and diced
  • 1 cup carrots, diced
  • 1 cup onions, chopped
  • 4 cups vegetable broth
  • 2 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the onions and cook until translucent.
  3. 3. Add the carrots and beets, cook for another 5 minutes.
  4. 4. Pour in the vegetable broth and bring to a boil.
  5. 5. Reduce heat and simmer for 30 minutes, or until vegetables are tender.
  6. 6. Blend the soup until smooth. Season with salt and pepper to taste.
