Ingredients 

Dough

  • 4 cups all-purpose flour
  • 1 packet active dry yeast
  • 1 cup warm milk
  • ¼ cup sugar
  • ¼ cup butter, melted
  • 1 teaspoon salt
  • 2 eggs

Filling

  • 1 lb ground beef
  • 1 cup onion, chopped
  • 4 cups cabbage, shredded
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions 

  1. 1. In a large mixing bowl, combine 2 cups of flour and yeast.
  2. 2. In a saucepan, heat milk, sugar, butter, and salt until warm and butter is almost melted.
  3. 3. Add warm milk mixture to flour mixture; add eggs. Beat with an electric mixer on low speed for 30 seconds, then on high for 3 minutes.
  4. 4. Stir in remaining flour to make a soft dough. Knead on a floured surface until smooth and elastic, about 6-8 minutes.
  5. 5. Place dough in a greased bowl, cover, and let rise in a warm place until doubled, about 1 hour.
  6. 6. For filling, cook ground beef and onion in a skillet until meat is browned. Drain fat. Add cabbage, salt, and pepper. Cook until cabbage is tender.
  7. 7. Punch down dough and divide into 16 pieces. Roll each piece into a 6-inch circle. Place about ¼ cup filling in the center of each circle. Fold dough over filling and pinch edges to seal.
  8. 8. Place bierocks on a greased baking sheet. Bake at 375°F for 20-25 minutes or until golden brown.
