Birria
- 3 lbs Beef chuck roast
- 2 cups Beef broth
- 5 pcs Dried guajillo chiles stems and seeds removed
- 3 pcs Dried ancho chiles stems and seeds removed
- 1 pc White onion quartered
- 6 cloves Garlic
- 1 tablespoon Dried oregano
- 1 teaspoon Ground cumin
- 2 pcs Bay leaves
- to taste Salt
- to taste Black pepper
Tacos
- 12 pcs Corn tortillas
- 1 cup Chopped cilantro
- 1 cup Diced onions
- 1 cup Lime wedges
1. In a large pot, add beef chuck roast, beef broth, guajillo chiles, ancho chiles, onion, garlic, oregano, cumin, bay leaves, salt, and black pepper. Bring to a boil.
2. Reduce heat and simmer for 3 hours, until beef is tender and shreds easily.
3. Remove beef from pot and shred with forks. Strain the broth and reserve for serving.
4. Heat corn tortillas on a skillet until warm and pliable.
5. Fill tortillas with shredded beef, cilantro, onions, and a squeeze of lime. Serve with reserved broth for dipping.
