Ingredients 

Birria

  • 3 lbs Beef chuck roast
  • 2 cups Beef broth
  • 5 pcs Dried guajillo chiles stems and seeds removed
  • 3 pcs Dried ancho chiles stems and seeds removed
  • 1 pc White onion quartered
  • 6 cloves Garlic
  • 1 tablespoon Dried oregano
  • 1 teaspoon Ground cumin
  • 2 pcs Bay leaves
  • to taste Salt
  • to taste Black pepper

Tacos

  • 12 pcs Corn tortillas
  • 1 cup Chopped cilantro
  • 1 cup Diced onions
  • 1 cup Lime wedges

Instructions 

  1. 1. In a large pot, add beef chuck roast, beef broth, guajillo chiles, ancho chiles, onion, garlic, oregano, cumin, bay leaves, salt, and black pepper. Bring to a boil.
  2. 2. Reduce heat and simmer for 3 hours, until beef is tender and shreds easily.
  3. 3. Remove beef from pot and shred with forks. Strain the broth and reserve for serving.
  4. 4. Heat corn tortillas on a skillet until warm and pliable.
  5. 5. Fill tortillas with shredded beef, cilantro, onions, and a squeeze of lime. Serve with reserved broth for dipping.
