Instructions
Heat oil in a pan over medium heat.
Add chopped vegetables and sauté until tender.
Push vegetables to the side and crack eggs into the pan. Scramble until cooked.
Add cooked rice and soy sauce. Stir well.
Season with salt and pepper. Cook for another 5 minutes.
Serve hot.
