Main Ingredients
- 2 pcs Zucchini sliced
- 2 pcs Eggplants sliced
- 4 pcs Potatoes peeled and sliced
- 1 pcs Onion sliced
- 4 cloves Garlic minced
- 4 pcs Tomatoes sliced
- ½ cup Olive oil
- 1 teaspoon Salt to taste
- 1 teaspoon Black pepper to taste
- 1 teaspoon Dried oregano
- ½ cup Parsley chopped
Preheat your oven to 375°F (190°C).
In a large baking dish, layer the zucchini, eggplants, potatoes, onion, garlic, and tomatoes.
Drizzle with olive oil and season with salt, pepper, and oregano.
Mix everything well to ensure the vegetables are evenly coated.
Bake in the preheated oven for about 60 minutes, or until the vegetables are tender and slightly browned.
Garnish with chopped parsley before serving.
