- 4 cups Broccoli Florets
- 2 cups Cheddar Cheese, shredded
- 1 cup Heavy Cream
- 1 cup Chicken Broth
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 2 tablespoon Butter
- to taste Salt and Pepper
1. In a large pot, melt butter over medium heat. Add chopped onion and garlic, sauté until translucent.
2. Add broccoli florets and chicken broth. Bring to a boil, then reduce heat and simmer until broccoli is tender, about 10 minutes.
3. Use a blender to puree the soup until smooth. Return to pot.
4. Stir in heavy cream and shredded cheddar cheese. Cook over low heat until cheese is melted and soup is heated through.
5. Season with salt and pepper to taste. Serve hot.
