  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs separated
  • ¼ cup unsalted butter melted
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your waffle iron.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the buttermilk, egg yolks, melted butter, and vanilla extract.
  4. In a separate bowl, beat the egg whites until stiff peaks form.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the beaten egg whites.
  6. Pour the batter onto the preheated waffle iron and cook according to the manufacturer's instructions until golden brown and crisp. Serve immediately.
