Ingredients 

Main Ingredients

  • 2 lbs beef shank, with bone
  • 1 onion, quartered
  • 2 cloves garlic, minced
  • 2 ears corn, cut into thirds
  • 2 carrots, sliced
  • 2 zucchinis, sliced
  • ½ cabbage, chopped
  • 4 potatoes, quartered
  • ¼ cup cilantro, chopped
  • Salt and pepper to taste
  • 8 cups water

Instructions 

  1. In a large pot, add beef shank, onion, garlic, and water. Bring to a boil.
  2. Reduce heat and simmer for 1 hour.
  3. Add corn, carrots, potatoes, and cook for another 30 minutes.
  4. Add zucchini, cabbage, cilantro, salt, and pepper. Cook for an additional 30 minutes.
  5. Serve hot.
