Caldo de Res Beef Soup Recipe
A hearty and traditional Mexican beef soup, perfect for a comforting meal.

Main Ingredients
- 2 lbs beef shank, with bone
- 1 onion, quartered
- 2 cloves garlic, minced
- 2 ears corn, cut into thirds
- 2 carrots, sliced
- 2 zucchinis, sliced
- ½ cabbage, chopped
- 4 potatoes, quartered
- ¼ cup cilantro, chopped
- Salt and pepper to taste
- 8 cups water
In a large pot, add beef shank, onion, garlic, and water. Bring to a boil.
Reduce heat and simmer for 1 hour.
Add corn, carrots, potatoes, and cook for another 30 minutes.
Add zucchini, cabbage, cilantro, salt, and pepper. Cook for an additional 30 minutes.
Serve hot.
