Ingredients 

Main Ingredients

  • 1 unit Zucchini, sliced
  • 1 unit Red bell pepper, sliced
  • 1 unit Red onion, sliced
  • 4 units Ciabatta rolls, split
  • ¼ cup Mayonnaise
  • ¼ cup Pesto
  • 1 cup Arugula

Instructions 

  1. Preheat grill for medium heat.
  2. Lightly brush zucchini, red bell pepper, and red onion with olive oil.
  3. Place vegetables on the grill. Cook until tender, about 3-5 minutes per side.
  4. Spread mayonnaise and pesto on the cut sides of the ciabatta rolls.
  5. Layer grilled vegetables and arugula on the rolls. Close sandwiches and serve.
