Ingredients

  • 3 cups Zucchini, sliced
  • 1 cup Cheddar cheese, shredded
  • 1 cup Mozzarella cheese, shredded
  • 1 cup Breadcrumbs
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine zucchini, olive oil, salt, and pepper.
  3. Layer half of the zucchini in a baking dish. Sprinkle with half of the cheddar and mozzarella cheese.
  4. Repeat the layers with the remaining zucchini and cheese.
  5. Top with breadcrumbs.
  6. Bake for 25-30 minutes, until golden and bubbly.
