Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 lb boneless, skinless chicken breasts, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 lb gnocchi
  • 2 cups spinach
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Cook until vegetables are tender.
  2. Add chicken and cook until browned. Pour in chicken broth and bring to a boil.
  3. Reduce heat and stir in heavy cream. Add gnocchi and cook until they float to the top.
  4. Stir in spinach and cook until wilted. Season with salt and pepper to taste. Serve hot.
