Ingredients 

Main Ingredients

  • 1 lb Chicken breast diced
  • 1 cup Wild rice
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 3 cups Chicken broth
  • 2 cups Water
  • 2 medium Carrots sliced
  • 2 stalks Celery sliced
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 teaspoon Dried thyme

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the diced chicken and cook until browned.
  2. 2. Add the chopped onion and minced garlic. Cook until the onion is translucent.
  3. 3. Pour in the chicken broth and water. Add the wild rice, carrots, celery, salt, pepper, and thyme. Stir well.
  4. 4. Bring to a boil, then reduce heat and let it simmer for about 45 minutes, or until the rice is tender.
  5. 5. Adjust seasoning if needed. Serve hot.
