Ingredients 

Main Ingredients

  • 1 lb Chicken Breast boneless, skinless
  • 8 cups Chicken Broth
  • 2 Carrots sliced
  • 2 Celery Stalks sliced
  • 1 Onion diced
  • 2 cloves Garlic minced
  • 8 oz Egg Noodles
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Parsley

Instructions 

  1. 1. In a large pot, heat some oil over medium heat. Add the diced onion, minced garlic, sliced carrots, and sliced celery. Cook until vegetables are tender.
  2. 2. Add the chicken broth, salt, pepper, thyme, and parsley. Bring to a boil.
  3. 3. Add the chicken breasts to the pot. Reduce heat and simmer until chicken is cooked through, about 20 minutes. Remove chicken and shred it with two forks.
  4. 4. Return the shredded chicken to the pot. Add the egg noodles and cook until tender, about 8-10 minutes.
  5. 5. Adjust seasoning with salt and pepper to taste. Serve hot.
