Ingredients

  • 2 cups Cooked Chicken, shredded
  • ½ cup Mayonnaise
  • ¼ cup Celery, chopped
  • ¼ cup Red Onion, chopped
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 8 slices Bread
  • 4 leaves Lettuce

Instructions 

  1. 1. In a mixing bowl, combine the shredded chicken, mayonnaise, celery, red onion, lemon juice, salt, and black pepper. Mix well.
  2. 2. Lay out the bread slices. Place a lettuce leaf on four of the slices.
  3. 3. Spoon the chicken salad mixture onto the lettuce leaves, then top with the remaining bread slices.
  4. 4. Cut the sandwiches in half and serve.
