Main Ingredients
- 1 whole Chicken cut into pieces
- 4 cups Chicken Broth
- 2 cups Carrots sliced
- 1 cup Celery sliced
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
- 1 teaspoon Dried Thyme
- 1 teaspoon Dried Parsley
1. In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
2. Add the chicken pieces to the pot and cook until they are browned on all sides.
3. Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer for about 20 minutes.
4. Add the sliced carrots, celery, salt, pepper, thyme, and parsley. Continue to simmer for another 20-25 minutes, until the vegetables are tender and the chicken is cooked through.
5. Adjust the seasoning if needed. Serve hot.
