Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 lb chicken breast, cooked and shredded
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste salt and pepper
  • 1 lime, juiced
  • 1 handful fresh cilantro, chopped
  • for serving tortilla chips

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the cooked chicken, chicken broth, diced tomatoes, black beans, corn, chili powder, cumin, and paprika. Stir to combine.
  3. Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes.
  4. Season with salt and pepper to taste. Stir in the lime juice and fresh cilantro just before serving.
  5. Serve hot with tortilla chips on the side.
