Ingredients 

Main Ingredients

  • 4 slices bacon chopped
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 cups chicken broth
  • 1 cup water
  • 2 cups potatoes diced
  • 1 cup heavy cream
  • 2 cans clams with juice
  • to taste salt and pepper
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 1 bay leaf
  • optional fresh parsley chopped

Instructions 

  1. Cook bacon in a large pot until crispy. Remove and set aside.
  2. In the same pot, sauté onion and garlic in bacon fat until translucent.
  3. Add butter and flour, stirring to make a roux.
  4. Gradually add chicken broth and water, stirring constantly.
  5. Add potatoes and bay leaf. Simmer until potatoes are tender.
  6. Stir in clams with juice, heavy cream, and cooked bacon.
  7. Season with salt and pepper. Simmer for another 10 minutes.
  8. Remove bay leaf. Garnish with fresh parsley if desired.
