Cold Green Bean Salad

Main Ingredients
- 500 g Green beans trimmed and cut into 2-inch pieces
- 1 cup Cherry tomatoes halved
- ¼ cup Red onion thinly sliced
- 2 tablespoon Olive oil
- 1 tablespoon Red wine vinegar
- 1 clove Garlic minced
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
1. Bring a pot of salted water to a boil. Add green beans and cook for 3-5 minutes until tender-crisp.
2. Drain and immediately plunge beans into a bowl of ice water to stop cooking. Drain again and pat dry.
3. In a large bowl, combine green beans, cherry tomatoes, and red onion.
4. In a small bowl, whisk together olive oil, red wine vinegar, garlic, salt, and pepper.
5. Pour dressing over the salad and toss to coat. Serve chilled.
