Ingredients 

Main Ingredients

  • 2 cups Cooked rice preferably day-old
  • 2 Eggs beaten
  • 1 cup Mixed vegetables carrots, peas, corn
  • 2 tablespoon Soy sauce
  • 2 tablespoon Vegetable oil
  • 2 cloves Garlic minced
  • 1 Green onion chopped
  • to taste Salt and pepper

Instructions 

  1. Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat.
  2. Add the beaten eggs and scramble until fully cooked. Remove from the wok and set aside.
  3. In the same wok, add the remaining oil. Add minced garlic and sauté until fragrant.
  4. Add the mixed vegetables and cook for 2-3 minutes.
  5. Add the cooked rice, soy sauce, and scrambled eggs. Stir-fry for another 3-5 minutes until everything is well combined and heated through.
  6. Season with salt and pepper to taste. Garnish with chopped green onions before serving.
