Ingredients 

Main Ingredients

  • 4 cups milk
  • 5 eggs separated
  • ¾ cup sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cinnamon
  • 1 cup rum or bourbon optional

Instructions 

  1. In a saucepan, heat the milk until it begins to steam. Do not boil.
  2. In a mixing bowl, whisk the egg yolks and sugar until thick and pale.
  3. Slowly add the hot milk to the egg mixture, whisking constantly.
  4. Return the mixture to the saucepan and cook over medium heat until thickened, stirring constantly.
  5. Remove from heat and stir in the cream, vanilla, nutmeg, and cinnamon. Let cool.
  6. In a separate bowl, beat the egg whites until soft peaks form. Fold into the cooled mixture.
  7. If using, stir in the rum or bourbon. Chill before serving.
