Ingredients

  • 2 large eggplants sliced into ¼ inch rounds
  • 2 cups breadcrumbs Italian seasoned
  • 3 cups marinara sauce
  • 2 cups mozzarella cheese shredded
  • ½ cup Parmesan cheese grated
  • 2 large eggs beaten
  • ½ cup all-purpose flour
  • 1 cup olive oil for frying

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Dip eggplant slices in flour, then beaten eggs, and coat with breadcrumbs.
  3. Heat olive oil in a frying pan and fry eggplant slices until golden brown. Drain on paper towels.
  4. In a baking dish, layer fried eggplant slices, marinara sauce, mozzarella, and Parmesan cheese. Repeat layers.
  5. Bake in preheated oven for 20-25 minutes until cheese is melted and bubbly.
  6. Let it cool for a few minutes before serving.
