Ingredients 

Main Ingredients

  • 2 cups Egusi (melon seeds) ground
  • 1 cup Palm oil
  • 1 large Onion chopped
  • 1 pound Beef cut into chunks
  • 1 pound Smoked fish deboned
  • 2 cups Spinach chopped
  • 2 cups Water
  • 2 tablespoons Crayfish ground
  • 2 cubes Bouillon
  • to taste Salt
  • to taste Pepper

Instructions 

  1. 1. Blend the egusi seeds until smooth. Set aside.
  2. 2. Heat the palm oil in a large pot over medium heat. Add the chopped onions and sauté until translucent.
  3. 3. Add the beef chunks and cook until browned on all sides.
  4. 4. Add the ground egusi, stirring constantly to prevent burning. Cook for about 10 minutes.
  5. 5. Pour in the water and bring to a boil. Reduce heat and simmer for 20 minutes.
  6. 6. Add the smoked fish, crayfish, bouillon cubes, salt, and pepper. Stir well.
  7. 7. Add the chopped spinach and cook for another 5 minutes.
  8. 8. Serve hot with fufu, pounded yam, or rice.
