Ingredients

  • 4 large flour tortillas
  • 6 eggs beaten
  • 1 cup shredded cheese
  • 1 cup cooked sausage crumbled
  • 1 bell pepper diced
  • 1 onion diced
  • 1 tablespoon butter
  • to taste salt and pepper

Instructions 

  1. 1. In a skillet, melt butter over medium heat. Add bell pepper and onion, cook until softened.
  2. 2. Add beaten eggs to the skillet, scramble until cooked through. Season with salt and pepper.
  3. 3. Warm tortillas in the microwave for a few seconds to make them pliable.
  4. 4. Divide the egg mixture, sausage, and cheese evenly among the tortillas. Roll up each tortilla, folding in the sides as you go.
  5. 5. Wrap each burrito in aluminum foil and place in a freezer bag. Freeze until ready to eat.
  6. 6. To reheat, remove foil and microwave on high for 2-3 minutes, or until heated through.
