  • 2 large eggplants sliced into ¼ inch rounds
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup vegetable oil for frying

Instructions 

  1. 1. Slice the eggplants into ¼ inch rounds and place them on paper towels. Sprinkle with salt and let sit for 10 minutes to draw out moisture.
  2. 2. In one bowl, place the flour. In a second bowl, beat the eggs. In a third bowl, combine the breadcrumbs, Parmesan cheese, salt, and pepper.
  3. 3. Heat the vegetable oil in a frying pan over medium heat.
  4. 4. Dip each eggplant slice in the flour, then the beaten eggs, and finally coat with the breadcrumb mixture.
  5. 5. Fry the eggplant slices in the hot oil until golden brown, about 2-3 minutes per side. Drain on paper towels.
  6. 6. Serve hot and enjoy!
