- 2 medium zucchini sliced into rounds
- 1 cup all-purpose flour
- 2 large eggs beaten
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup vegetable oil for frying
1. Slice the zucchini into rounds.
2. In a bowl, combine flour, salt, and pepper.
3. Dip zucchini slices in flour mixture, then beaten eggs, and finally breadcrumbs mixed with Parmesan.
4. Heat oil in a frying pan over medium heat.
5. Fry zucchini slices until golden brown, about 2-3 minutes per side.
6. Drain on paper towels and serve warm.
