Ingredients 

Main Ingredients

  • 2 cups cooked couscous
  • 2 cups cooked chicken breast, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red onion, thinly sliced
  • ½ cup feta cheese, crumbled
  • ¼ cup kalamata olives, pitted and sliced
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions 

  1. 1. In a large skillet, heat olive oil over medium heat.
  2. 2. Add cooked chicken and cook until heated through, about 5 minutes.
  3. 3. In a mixing bowl, combine couscous, cherry tomatoes, cucumber, red onion, feta cheese, and kalamata olives.
  4. 4. Add the cooked chicken to the couscous mixture.
  5. 5. Drizzle with lemon juice and sprinkle with dried oregano. Season with salt and pepper to taste.
  6. 6. Toss everything together until well combined. Serve immediately.
