Ingredients

  • 4 Eggs
  • ¼ cup Chopped red bell pepper
  • ¼ cup Chopped onion
  • ¼ cup Chopped tomatoes
  • ¼ cup Crumbled feta cheese
  • 1 tablespoon Olive oil
  • 1 teaspoon Dried oregano
  • to taste Salt and pepper

Instructions 

  1. 1. In a mixing bowl, whisk the eggs with salt, pepper, and oregano.
  2. 2. Heat olive oil in a non-stick skillet over medium heat.
  3. 3. Add the chopped bell pepper, onion, and tomatoes. Sauté for 3-4 minutes until softened.
  4. 4. Pour the egg mixture into the skillet and cook until the eggs begin to set.
  5. 5. Sprinkle the crumbled feta cheese over the omelet. Fold the omelet in half and cook for another 1-2 minutes until the cheese is melted.
  6. 6. Serve hot and enjoy!
