Greek Quinoa Salad
A refreshing and healthy Greek quinoa salad, perfect for a light lunch or side dish.

Salad Ingredients
- 1 cup quinoa rinsed
- 2 cups water
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- ½ cup red onion finely chopped
- ½ cup kalamata olives pitted and halved
- ½ cup feta cheese crumbled
- ¼ cup olive oil
- 2 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- to taste salt and pepper
1. Rinse the quinoa under cold water.
2. In a saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Let it cool.
3. In a large mixing bowl, combine cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
4. In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper.
5. Add the cooled quinoa to the vegetable mixture. Pour the dressing over the salad and toss to combine.
6. Serve immediately or refrigerate for later.
