Main Ingredients
- 2 lbs Beef chuck, cut into cubes
- 2 tablespoon Olive oil
- 1 Large onion, chopped
- 3 cloves Garlic, minced
- 1 cup Red wine
- 2 cups Beef broth
- 1 can Diced tomatoes
- 2 tablespoon Tomato paste
- 1 teaspoon Dried oregano
- 1 teaspoon Dried thyme
- 2 pcs Bay leaves
- to taste Salt and pepper
1. Heat olive oil in a large pot over medium-high heat. Add beef and brown on all sides. Remove and set aside.
2. In the same pot, add onion and garlic. Sauté until softened.
3. Pour in red wine to deglaze the pot, scraping up any browned bits.
4. Add beef back to the pot along with beef broth, diced tomatoes, tomato paste, oregano, thyme, and bay leaves. Stir well.
5. Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours, or until beef is tender.
6. Season with salt and pepper to taste. Serve hot.
