- 2 lbs potatoes peeled and cut into wedges
- ¼ cup olive oil
- ¼ cup lemon juice
- 3 cloves garlic minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup chicken broth
- 2 tablespoon fresh parsley chopped, optional
Preheat your oven to 400°F (200°C).
In a large bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper.
Add the potato wedges to the bowl and toss to coat.
Place the potatoes in a single layer on a baking sheet.
Pour the chicken broth around the potatoes.
Roast in the preheated oven for 45 minutes, or until potatoes are golden and tender.
Garnish with fresh parsley before serving, if desired.
