Ingredients

  • 6 medium potatoes peeled and cut into wedges
  • ¼ cup olive oil
  • 3 cloves garlic minced
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper freshly ground
  • ½ cup chicken broth

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, garlic, lemon juice, oregano, salt, and pepper.
  3. Add the potato wedges to the bowl and toss to coat them evenly.
  4. Transfer the potatoes to a baking dish and pour the chicken broth over them.
  5. Bake in the preheated oven for 45 minutes, or until the potatoes are golden and tender.
  6. Serve hot, garnished with fresh herbs if desired.
