Ingredients

  • 1 package cheese tortellini cooked and cooled
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ½ cup red onion thinly sliced
  • ½ cup kalamata olives pitted and halved
  • ½ cup feta cheese crumbled
  • ¼ cup olive oil
  • 2 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1 clove garlic minced
  • to taste salt and pepper

Instructions 

  1. 1. Cook the tortellini according to package instructions. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
  3. 3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, minced garlic, salt, and pepper.
  4. 4. Pour the dressing over the salad and toss to combine.
  5. 5. Serve immediately or refrigerate for up to 2 hours before serving.
