  • 1 large eggplant sliced
  • 1 large zucchini sliced
  • 1 large red bell pepper sliced
  • 2 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 4 pieces whole grain bread toasted
  • ½ cup hummus

Instructions 

  1. Preheat the grill to medium-high heat.
  2. Brush the eggplant, zucchini, and red bell pepper slices with olive oil and sprinkle with dried oregano.
  3. Grill the vegetables for about 3-4 minutes on each side, until tender and slightly charred.
  4. Toast the whole grain bread slices.
  5. Spread hummus on each slice of toasted bread.
  6. Layer the grilled vegetables on two slices of bread and top with the remaining slices.
  7. Serve immediately and enjoy!
