King Ranch Chicken Casserole

Main Ingredients
- 2 cups Cooked chicken, shredded
- 1 can Cream of mushroom soup
- 1 can Cream of chicken soup
- 1 can Diced tomatoes with green chilies
- 1 cup Chicken broth
- 1 cup Sour cream
- 1 cup Shredded cheddar cheese
- 12 pieces Corn tortillas, cut into strips
- 1 medium Onion, chopped
- 1 medium Green bell pepper, chopped
- 2 tablespoons Olive oil
- to taste Salt and pepper
Preheat your oven to 350°F (175°C).
In a skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and cook until softened.
In a large mixing bowl, combine the cooked chicken, cream of mushroom soup, cream of chicken soup, diced tomatoes with green chilies, chicken broth, sour cream, and cooked onion and bell pepper. Mix well.
Layer half of the tortilla strips in the bottom of a greased baking dish. Top with half of the chicken mixture, then sprinkle with half of the shredded cheese. Repeat the layers.
Bake in the preheated oven for 30-40 minutes, or until bubbly and golden brown on top.
Let the casserole cool for a few minutes before serving. Enjoy!
