Main Ingredients
- 2 cups Leftover chicken, shredded
- 1 cup Mashed potatoes
- ½ cup Breadcrumbs
- 1 large Egg beaten
- ¼ cup Chopped onion
- ¼ cup Chopped parsley
- to taste Salt and pepper
- 2 tablespoon Olive oil for frying
In a large mixing bowl, combine the shredded chicken, mashed potatoes, breadcrumbs, beaten egg, chopped onion, and chopped parsley. Season with salt and pepper to taste.
Shape the mixture into small patties.
Heat the olive oil in a frying pan over medium heat.
Fry the patties in the hot oil until golden brown and crispy on both sides, about 3-4 minutes per side.
Drain on paper towels and serve hot.
