Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 2 Carrots, diced
  • 2 stalks Celery, diced
  • 8 cups Chicken Broth
  • 1 cup Orzo Pasta
  • 2 cups Cooked Chicken, shredded
  • 1 Lemon, juiced
  • to taste Salt and Pepper
  • 2 tablespoon Fresh Dill, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, garlic, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the orzo pasta and cook until tender, about 10 minutes.
  5. Stir in the cooked chicken and lemon juice. Season with salt and pepper to taste.
  6. Simmer for another 5 minutes. Stir in fresh dill before serving.
