Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 2 carrots Carrots chopped
  • 1 stalk Celery chopped
  • 6 cups Vegetable Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
  • 2 tablespoon Olive Oil

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onions, garlic, carrots, and celery. Cook until vegetables are tender.
  3. 3. Add lentils, vegetable broth, cumin, paprika, salt, and black pepper. Bring to a boil.
  4. 4. Reduce heat and simmer for 30-35 minutes, or until lentils are tender.
  5. 5. Adjust seasoning to taste and serve hot.
