Instructions
1. Rinse the rice under cold water until the water runs clear.
2. In a saucepan, bring water to a boil. Add the rice, olive oil, and salt. Stir well.
3. Reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and water is absorbed.
4. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
5. In a mixing bowl, combine the cooked rice, lime zest, lime juice, and chopped cilantro. Mix well.
