Ingredients

  • 1 cup Long grain white rice
  • 2 cups Water
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 Lime, zested and juiced
  • ½ cup Fresh cilantro, chopped

Instructions 

  1. 1. Rinse the rice under cold water until the water runs clear.
  2. 2. In a saucepan, bring water to a boil. Add the rice, olive oil, and salt. Stir well.
  3. 3. Reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and water is absorbed.
  4. 4. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
  5. 5. In a mixing bowl, combine the cooked rice, lime zest, lime juice, and chopped cilantro. Mix well.
