Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 3 cloves garlic, minced
  • 4 cups clam juice
  • 2 cups diced tomatoes
  • 2 cups diced potatoes
  • 2 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups chopped clams
  • ¼ cup chopped fresh parsley

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the onion, celery, and carrots, and cook until softened, about 5 minutes.
  2. Add the garlic and cook for another minute.
  3. Pour in the clam juice and bring to a boil. Add the tomatoes, potatoes, thyme, oregano, salt, and pepper. Reduce heat and simmer for 20 minutes, or until the potatoes are tender.
  4. Add the clams and parsley, and cook for another 5 minutes. Serve hot.
