Mediterranean Lentil Salad

Main Ingredients
- 1 cup dry lentils rinsed
- 2 cups water
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- ¼ cup red onion finely chopped
- ¼ cup feta cheese crumbled
- ¼ cup olives sliced
Dressing
- 3 tablespoon olive oil
- 1 tablespoon lemon juice freshly squeezed
- 1 teaspoon dried oregano
- 1 clove garlic minced
- to taste salt and pepper
1. Cook the lentils in a saucepan with water for about 20-25 minutes until tender. Drain and let cool.
2. In a large mixing bowl, combine the cooked lentils, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
3. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, minced garlic, salt, and pepper.
4. Pour the dressing over the salad and toss to combine. Serve immediately or chill in the fridge for later.
