Mediterranean Quinoa Salad

Main Ingredients
- 1 cup quinoa rinsed
- 2 cups water
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- ¼ cup red onion finely chopped
- ¼ cup kalamata olives sliced
- ¼ cup feta cheese crumbled
- 2 tablespoon olive oil
- 1 tablespoon lemon juice freshly squeezed
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
1. Rinse the quinoa under cold water.
2. In a pot, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes.
3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
4. In a large mixing bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
5. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
6. Pour the dressing over the salad and toss to combine.
7. Serve immediately or refrigerate for later.
